RECIPE: HEALTHY BANANA BREAD WITH PEANUT & CHOCOLATE FROSTING

As you may be able to tell, breakfast is my favourite meal of the day. I am also unashamed to admit that I have a massive sweet tooth, so one of the things I try to do with my cooking is to make sweet foods, healthier.

Last week, I tried out this insane banana bread – full of all the goodness and tastes like you are eating cake!! (HELLO BREAKFAST OF DREAMS!)

Here is my recipe, give it a go & let me know what you think.

INGREDIENTS:

FOR THE BREAD: 
·      2-3 medium ripe bananas
·      2 medium eggs
·      1 teaspoon of vanilla extract
·      2 teaspoon of cinnamon (this can be removed/reduced if you don’t like it)
·      1 teaspoon baking powder
·      170g of dark chocolate chips (these can be removed to reduce sugar content)
·      110g of melted coconut oil
·      4oz of skimmed or nut milk
·      3oz of honey
·      260g of wholemeal flour
·      1 tablespoon of Greek Yogurt
·      Handful of Raspberries
·      Teaspoon of flaked almonds

FOR THE ICING:
·      2x tablespoons of Pip & Nut Peanut Butter 
·      1x tablespoon of Cacao Powder 
·      2x tablespoons of almond milk 
·      2x tablespoons of Greek Yogurt

·   1 squeeze of honey

METHOD:
·      Pre-heat your oven to 180 degrees (fan oven) and line your tray with either baking paper or a little coconut oil 
·      In a bowl, mix the flour, baking powder, cinnamon together until it is one powder
·      Once this is done, whisk the eggs, coconut oil, milk, vanilla and honey together for around 2 minutes or until it is light in colour



·      Mix in the ‘flour mixture’ until you create a light texture like the below. If it is a bit stiff slowly add drops of milk or water until the mix resembles the below


·      Add in the chocolate drops and any other extras such as raisins, walnuts etc
·      Pour the mixture into your tray and allow to cook for 25-30mins (make sure you check it is cooked though by using a toothpick – pop it in the middle of the bread and if it is cooked it will come out clean)
·      Once baked, leave to cool and make the icing mix
·      To make the icing, mix all the ingredients together in a bowl until it is a light texture. 
·      Once the icing is set, slice up and enjoy!

·      To make it even more delicious, simply add Greek yogurt, raspberries and almond flakes – BON APPETIT
