SUPER EASY 'FLOURLESS' PANCAKES

Because what is life without pancakes?
Pancake Day or 'Shrove Tuesday' as it is otherwise known, is one of my favourite days of the year. I love pancakes more than most foods so this day is like heaven for me - especially as I can eat pancakes all day and not be judged (sorry, not sorry).
In honour of it being pancake day TOMORROW, here is my super easy, healthy and delicious way of making pancakes. These are the exact ones I make every weekend (no regrets) and have done for years, so they are seriously tried and tested! Plus, they are flourless so they are suitable for most diets, especially my gluten free gang out there!
You need THREE (yes, three!) ingredients to make the batter:
- 2x Eggs
- 2x Large Bananas (try and use ones that are just ripe as it makes the batter stiffer)
- 1 tablespoon of Cinnamon
Whizz it all up and voila, your batter is ready!
Fry the mixture up in a little coconut oil (my favourite is Vita Coco) on a medium heat. They take about 2-3 minutes on each side.
Top with berries, yogurt & honey and you are good to go! Or, if you are a Nutella lover like me, try my healthy version here!
