So, as you probably know by now, I have a serious breakfast addiction. Whether is it pancakes, avo on toast or an omelette, I am all about those brekkie vibes. The other day, I was seriously limited on choices because I had been too lazy to go food shopping and that’s when I whipped by this insane & guilt free French toast with the few things I had left in my cupboards…. And because, who doesn’t LOVE French toast?

WHAT YOU NEED (FOR 1 SERVING):
·      1x Wholemeal Pitta Bread (or sliced rye/wholemeal bread)
·      1x Egg
·      2x Tablespoons of Cinnamon
·      1x Teaspoon of Coconut Oil (my favourite is Vita Coco which I usually get from Holland & Barrett)
·      1x Tablespoon of Natural Yogurt
·      Raspberries or Blueberries
·      Flaked Almonds

METHOD:
·      Heat the coconut oil in a frying pan on a medium heat
·      Beat the egg and cinnamon together in a small bowl 
·      Cut your pitta bread (or other bread option) in two pieces and dip into the egg mixture
·      Turn over in the mixture several times and ensure the bread is fully covered
·      Once the oil is hot, add the bread to the pan and cook on either side for about 5 minutes
·      Once golden brown, remove from heat and top with yogurt, berries and almonds

OTHER IDEAS:
·      Top with a drizzle of honey or maple syrup
·      Add Cacao powder to the egg mixture for a chocolate taste!
