RECIPE: HEALTHY NUTELLA

I know you probably read this title & was like, whaaaaaat, healthy Nutella, really?! Yes, REALLY! It has taken me a little while to completely perfect this recipe and get rid of the bitterness but I think I have pretty much NAILED it now.
I am literally obsessed with Nutella/ Ferrero Rocher/anything hazelnut-choc based, so I decided to make it my mission to try all the recipes out there and make my own perfect one and voila, here it is. Enjoy, spread on anything & everything - let me know what you think!
WHAT YOU NEED:
- 200g hazelnuts
- 40g cacao powder (this pack is a BARGAIN, £2.99, from one of my favourite health shops, The Grape Tree)
- 8 oz of almond milk
- 1 tablespoon vanilla extract
- 2 tablespoons of honey
- 1 teaspoon of coconut sugar *optional – if you find the spread a little bitter due to the cacao powder, add a further teaspoon of coconut sugar to sweeten
METHOD:
- Preheat oven to 180 degrees
- Pour the hazelnuts onto a baking tray & roast in the oven for 10 minutes
- Next, you need to pull off the skins of the hazelnuts. I find the easiest way to do this is grab handfuls and rub in-between your hands – I won’t lie, it gets a little messy but hey, you’re making Nutella right?!
- Once ‘skinned’, pop the hazelnuts to a blender/food processor and blend until smooth as possible
- Pour in some of the almond milk and mix again, repeat this process until the mixture is like a spread
- Now, add the cacao powder, honey, vanilla extract & coconut sugar and whizz up again – I usually leave this to mix for about 3-4 minutes just to make sure it is super smooth
- Taste & add more coconut sugar or honey to sweeten if you need too
- Now your Nutella is ready! Pour into a jar & enjoy
